Real New York Bagels
I first learned how to make bagels when a customer came into the bakery where I worked and offered to give me a quick ‘how to’ lesson. I agreed, not knowing they previously owned a famous Lower East Side bagel shop, and currently run an international operation.
Working with that passionate bagel maker inspired me to start on my own bagel journey, culminating when I earned second place in the US Bread Awards bagel category 2 years in a row!
Bagels are one of my favorite things to teach with its deep history, and unique baking method. Many of the techniques and processes that are used in bagel making carry over into various other styles of breads, which will make it easier for you to approach other recipes.
